How to Make a Boulevardier

The Boulevardier is what happens when a Negroni puts on a heavier coat. Bourbon, sweet vermouth, and Campari give you bitterness, oak, spice, and richness in the same glass. It is easier for many guests to love than a Negroni because whiskey softens the Campari. That does not make it less serious. It just makes it more forgiving.

Ingredients

1 1/4 ozBourbon

Bourbon adds sweetness, oak, and weight. Rye also works if you want a drier and spicier version.

1 ozSweet vermouth

Fresh sweet vermouth provides the bridge between whiskey richness and Campari bitterness.

1 ozCampari

Campari keeps the drink from getting lazy. Without that bitter edge, it is just a sweet whiskey aperitif.

Instructions

    Stir bourbon, sweet vermouth, and Campari with ice until well-chilled.

    Stir until properly chilled and slightly softened. This drink wants polish, not force.

    Strain into a chilled cocktail glass or over a large ice cube in an old-fashioned glass.

    Up or on a big rock both work. Choose based on whether you want elegance or longer drinking time.

    Garnish with an orange twist.

    Orange twist is the correct aromatic finish. The drink wakes up when the oils land.

Bartender Tips

  • If the guest wants a Negroni but says they do not like gin, this is your answer.
  • A slightly richer vermouth can make this drink feel luxurious, but it still needs the Campari edge.
  • Serve this a little colder than an Old Fashioned. It benefits from that extra snap.

Rye Boulevardier

Use rye whiskey for more bite and a drier finish.

Smoky Boulevardier

A barspoon of peated Scotch or a split base can add smoke if used carefully.

White Boulevardier

A more experimental riff using gentian or blanc amaro in place of Campari for a lighter bitter profile.
